  <body>&lt;p&gt;We have given our overall impressions in our story but the cooking class was special, our Chef for the day took us through each dish step by step, showed us how to use Vietnamese cooking implements and techniques and then made us do it. As the dishes were finished we sat down to eat them, joined by Ngoc, the Chef,&amp;nbsp;who ate with us and talked about the&amp;nbsp;food and much more. The idea being to enjoy the food and space out the time between eating each course, giving us time to recover our appetite for the next dish! The kitchen is an open air pavilion set in lush gardens and nearby is a large swimming pool which can be used after the course. The most interesting&amp;nbsp;lesson was learning how to make rice noodles the traditional way.&lt;/p&gt;&lt;p&gt;After cooking the last two dishes claypot fish and shrimps in banana leaf we were taken over to the main restaurant where we settled back in comfort, order a cold beer and enjoyed our own cooking! As mentioned the Chef is quite a character and he is certainly an integral part of the entertainment and we thoroughly enjoyed his company and banter. The end of the day saw us being ferried back to Hoi An and enjoying the sights on the way. A treat in itself and we have been spoilt having the place to ourselves, the clas can be up to a maximum of 8.&lt;/p&gt;&lt;p&gt;At $35US per head this is one thing that you should do in Hoi An, the best days entertainment and value we had in our week here.&lt;/p&gt;</body>
