Maui:  My memory isn't as good since we went 2 years ago....but here is what we did.
-Take Surf Lessons.  We did it in Lahaina and my husband stood up on his first try since the waves aren't too high on this beach.

-The Road to Hana - its a full day event and a must do thing.  Rent a Jeep and bring towels since it is the rain forest.  Jump the cliff at the Seven Pools.  Its plenty deep and fun. 

-Don't do the bike rides down the volcano.  Its lame. 
-Old Lahiana Luau - There are a lot of luau's geared towards family and children, so ask around for suggestions.  We enjoyed this one.

-Snorkel on Malikini (wrong spelling) - its another cruise like boat ride out to another island.  We had fun but its not a total must do.  You can snorkel anywhere.

-We stayed on the other side of Maui in Kaanapali so I can't tell you much to do around the The Four Seasons.  Tiffany's and some other high end stores are near your hotel. The Big Beach is great.

Restaurants:
Roy's - very good, but maybe a bit far for you guys since its in Kaanapali. Chain restaurant now in CA.
Pacific'o - Awesome!!  Our favorite.  In Lahaina.
Another good spot in Lahaina...on a side street of the main strip through downtown Lahaina.  Its a man's name..."Paul K"??

General Recommendations:
- Buy and bring your own snorkel gear.  The hotel charges a lot more per day and you'll use it a lot.  A lot of the beaches are really shallow in Kauai due to the reefs which enables you to see a ton of fish, turtles, etc.

-Stop at the grocery store to stock up on lunch food, snacks and drinks.  Food prices are outrageous on the islands.
-Buy a waterproof camera with a flash.

-www.PleasantHolidays.com is another company like SunTrips that outlines the islands pretty well.  You can use it for some references before going.  Not a HUGE source, but it will get you all excited to go since it has island virtual tours.
