The Hilton and its Restaurant Porat opened to great fanfare in May 2005, and so far, neither has been a disappointment. Porat's elegant second-floor dining room offers a menu laden with local foods, but with creative twists and sauces. Try crispy skinned sea bass filet with sea salt and candied lemon from the lava-stone grill; or beef tenderloin and tomato-shallot marmalade. You can also find duck breast on the menu, which is unusual in Dalmatia. The Porat's version is served with apricot/pancetta rolls and veggies.
