No other restaurant has been more responsible for the culinary renaissance in Scotland than the Ubiquitous Chip. Opening the "Chip" in 1971, chef/owner Ronnie Clydesdale was ahead of the curve, bringing the best Scottish ingredients into his kitchen -- and then to the attention of diners. To this day, the menus state the provenance of the produce, a practice now commonplace in better restaurants. Inside the walls of a former stable, the recently renovated dining room focuses on an interior courtyard with a fountain and masses of climbing vines. The menu may feature free-range chicken, Aberdeen Angus beef, shellfish with crispy seaweed snaps, or wild rabbit. Upstairs, the friendly pub and small brasserie (Upstairs at the Chip) serves similar quality fare at a fraction of the price.
