Located in the trendy W Seattle hotel, this stylish restaurant divides its menu between -- you guessed it -- the earth and the ocean. The menu changes regularly, but a recent chilled sweet-pea soup served with a little scoop of lemon-verbena sorbet perfectly captured the essence of spring, while pan-fried soft-shell crab with a corn reduction sauce put to shame every other soft-shell crab I've had. There were also superb sweetbreads served with peas, morels, and a shallot marmalade, along with delicious duck confit served with dried cherries, spaetzle, and pistachios. Whatever you do, don't fill up too much before dessert: The restaurant's pastry chef is considered by many to be the best in the city.
