Red Fish is far better than anything else in its price range on Bourbon Street, and -- surprise! -- it's another Brennan restaurant. Ralph Brennan's place (one of the first Quarter restaurants to reopen after Katrina) serves many New Orleans specialties with an emphasis on -- surprise again -- fish. Skip the dull salads in favor of appetizers like shrimp rémoulade napoleon (layered between fried green tomatoes) or grilled shrimp and shiitake-mushroom quesadillas. For your entree, go right to the fish they do so well. Whatever you have will be light and flaky with flavors that complement one another, rich (it is New Orleans) but not overly so. The signature dish is a pan-seared catfish topped with sweet-potato crust and an andouille cream drizzle. It's so outstanding, we asked for the recipe so we could try to re-create it at home. (We couldn't really, but it was fun trying.) Also splendid is the grilled Gulf fish with a pecan butter sauce.
