Politicians, businessmen, families, and out-of-towners have been coming to Istanbul's first licensed restaurant for over a century. The recipes reflect the best of traditional Turkish cuisine, serving substantial stews, whole artichokes baked with vegetables in olive oil, and their signature dish, the lamb shank with eggplant. Lining the walls are enormous glass jars filled with fruit compotes made on the premises and incorporated into the chef's proud desserts, such as quince marinated in syrup or the sweetbread custard topped with figs, apricot, pistachio, and coconut.
