Chef Jamie Stachowksi is a fixture on the Washington restaurant scene (he was a chef at Pesce, among other places), but this is the first restaurant he can call his own. His cuisine is inventive and though sometimes you wonder what you're letting yourself in for -- onion and fresh white anchovy tartelette with tuna tartare, maybe -- the answer invariably turns out to be: something wonderful. A recent dinner menu offered a lobster cassoulet as an appetizer and an entree of horseradish-crusted Colorado lamb with slow braised lamb shoulder and wild mushroom moussaka, and baked Alaskan halibut with Dungeness crab. In a town where a restaurant critique by the Washington Post can make or break you, Restaurant Kolumbia, at this writing, had yet to be reviewed, and so was off to a slow start. Perhaps in an effort to jumpstart business, Kolumbia began hosting happy hour, 5-7pm weekdays (half-price wine by the glass or bottle, $5 rail drinks), in its long, sleek bar. So start there, if you like, then wander down to the end of the bar for a peek at the handsome dining room and the creative menu, and finally to a table, if available.
