Jean-François Rouquette (Christian Constant's ex right-hand man at the Crillon) proves himself a talented whizz in the kitchen. Try his Clams au Gratin with thyme and salted butter, Pan-Roasted Fillet of Red Mullet with olives, or rabbit with aromatic herbs and spinach gnocchi.
