In this temple of fine dining, it is essential Pacific Northwestern cuisine that rules the roost. The decor is a great blend of the ancient and the modern. While the sleek glass-topped bar and the wooden flooring look very contemporary, it is the Polymer stone fire-place that brings back memories of the era gone-by. An ancient vault now houses some of the world's best wines, while the 'confessional stand' in the restaurant's Moroccan Room is an allusion to its holy name. Dishes such as Seared Sablefish, Roast Vancouver Island Oysters and Rosemary Pork Chop are delectable samples of the exotic cuisine on offer.
