We loved our 8-day Intrepid tour, A Taste of Thailand!  The highlights were:

Riding elephants for an hour and a half through farmland and streams

Nothing beats travelling past lakes with floating houses in the Thai mountains, sitting in the back of a truck with 10 fellow travellers and eating a Cornetto icecream!

Climbing 2200m to the top of the spectacular 7-step Erawan Waterfall (exhausting but worth it!)

Kayaking down the River Kwai

Travelling on local transport, particularly songtheows - nothing beats travelling past lakes with floating houses in the Thai mountains, sitting in the back of a truck with 10 fellow travellers and eating a Cornetto icecream!  :)

Friendly bargaining with market stall holders

Visiting the Baan Unrak children's home, meeting the happy kids, and watching their talented yoga performance

Playing games with the children of the Karen tribe in their village schoolhouse (we couldn't speak a single word they'd understand, but duck duck goose must be universal!)

...  What a fantastic week!  I have no hesitation in recommending this tour!
