We only spent 1 night here, there's very little to do, it's mainly a jumping on/off point for venturing into the Salar. We did manage to catch our first Euro 2008 match between Holland and Italy, which we watched it with a dutch guy in an Italian restaurant. In fact Uyuni is full of Italian restaurants, it does some of the best pizzas at Minuteman pizza restaurant where we ate that evening. Despite the towns lackluster feel, it was our first opportunity to see the Bolivian ladies dressed in their traditional attire, bowler hats, shawls and colonial influenced full ruffled skirts.

We booked a bus ticket for Sucre for the next day but had heard from other travelers that roadblocks were causing problems in the area.
