Oh yeah, we did find a Hotel in Sligo… Southern Hotel was an only one we found in Town, except of the one Down Town where they charge pretty high price for the location. In Sligo Southern Hotel they even have internet! First internet since we landed on this wonderful, humid, cloudy, all four seasons green Island. But they wanted extra charge amount, ravenous bastards! >>> (3rd hunted Beer glass)
… So we gonna send it later…

Good morning Sligo! It is another blustery day to travel. It is also Return Day for the car we rented. Full breakfast in our tummy, body should to use that energy for all day long, so we shall go to Galway. Sit chill into the lounge near by the fire place, enjoying sunshine that brought the brite color to the lounge, writing these lines, and making plans for the near future, when we gonna be in Ireland without a car. We should get around by Bus Eireann…

This winter is not as cold as it suppose to be, it is more like autumn here, but Irish folks are used to it... In Ireland is kinda always autumn season... and this autumn cake, originally baked on a griddle, was traditionally served at Halloween when a lucky ring would be hidden in the apple filling.
Apple and Potatoe Cake
1 lb. potatoes, weighed after peeling
1 oz. melted butter

2 oz. flour or 1,5 oz. flour and 1/2 oz. oatmeal combined
pinch of salt
2 teaspoons sugar
8 to 10 oz. cooking or dessert apples, peeled, cored and thinly sliced
A little milk
1 oz. butter, cut into flakes
1 oz. sugar, white or brown
pinch of ground ginger or cinnamon
Boil the potatoes in water until tender. Drain very well, mash with the melted butter and allow to cool slightly. Set oven to 400°F or Mark 6. Add the flour, salt and roll out the mashed potato and knead to form a pliable dough. Divide in half and roll out each half on a lightly floured surface to form two rounds about 1/2 inch thick. Arrange the apple slices over one round and top with the other, sealing the edges. Place on a greased baking sheet, brush with a little milk and bake for 25 to 30 minutes until golden brown. Remove from the oven and carefully remove the top. Sprinkle the apple with butter flakes, sugar and spice, replace the top and return to the oven for a further 2 to 3 minutes. Serve at once, cut into slices.
