We are having ceviche mixto for lunch today and Mari-Helena showed us how to make it... so I took down the recipe. It´s really delicious and so simple:
CEVICHE MIXTO
(serves 4-5)
1 pound of shrimp
1 pound of fish (firm)
2 tomatoes
1 Red onion
3 limes
3 oranges
2 cubes of chicken boillon
1 small spoon of pepper
1 small spoon of sabor (I think goya makes this, it´s a spice)
2 small spoonfuls of cumin
1 big spoon of yellow mustard
1. Put shrimp and fish in separate pots. Put one stock cube in each pot and add enough water to cover. Heat until shrimp are pink and fish is grey colored.
2. Finely dice onion, add to a big bowl. Grate tomatoes (and I mean grate them into mush!) and add to bowl. Squeeze limes and oranges and add juice to bowl. Add pepper, cumin and mustard. Stir.
3. Add shrimp and fish with the water they were cooked in. Mix.
4. Put in fridge till cold and serve with plantain chips or popcorn.

So, I´m leaving Canoa early tomorrow morning and going straight to Cuenca, a larger town (ecuador´s 3rd largest city) where I will stay for about 3 weeks. It will be another epic bus journey... 10 hours all in all, I believe. I´ll miss the beach, but it will be a nice change I think!
While walking here - on the beach - to the computer place (it´s about 2km), I was noting again how strange the things that wash on shore are. I´ve seen fish, I´ve seen tortugas (the huge turtles), huge tree trunks, lightbulbs (! totally unbroken) and so many other strange things. But today I saw something really sad. A baby dolphin (dead). Que triste.
Anyway, This weekend is a holiday in Ecuador -- I think for the liberation of Quito from the Spanish! It´s a big holiday and everyone had off of work and school yesterday and today. I know it´s Memorial Day in the Estados Unidos so I hope everyone has a wonderful long weekend filled with bbqs and great weather! Hasta luego!!
